We don’t need to go into the importance of spending good, quality time with your child. Giving them your undivided love and attention is integral to their growth and development – that's the long and short of it. But how you choose to spend your time and the activities to choose to engage in (and we aren’t talking about everyone sitting together in the living room to play with their phones, tablets and toys) plays an important role too. 

A fun activity for the kids and the best place for you to bond with them is in the kitchen, cooking up a storm. Not only can you complete your cooking and baking, but the kids get to do something fun, get the satisfaction and completing something too, and they get to do it with you! Who knows, you may even get the added bonus of having them eat healthier, more nutritious meals. 

With that in mind, we’ve put together 3 yummy, and still oh-so-healthy, muffin recipes for you to try.

Apple cinnamon muffins 

(We were inspired by Nigella's Apple and cinnamon muffins)

  • 2 golden delicious apples ( peeled and cubed)
  • 1¾ cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ? cup light brown sugar
  • 2 eggs 
  • ½ cup vegetable oil 
  • ½ cup honey
  • ¼ cup double cream yoghurt
  • ½ cup raw almonds (chopped) 

Measure out all your wet ingredients into one bowl, and your dry ingredients into another. 

Mix the dry into the wet ingredients, before mixing in your apples and almonds. 

Bake @ 180°C for 20-25 mins. 

Banana chocolate chip muffins 

  • 2 bananas (mashed)
  • ½ cup chocolate chips
  • 1 ½ cups all-purpose flour
  • ½ cup sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • Pinch of salt
  • 2 eggs
  • ¼ milk
  • 1/3 cup vegetable oil
  • 1 tsp vanilla essence 

Measure out all your wet ingredients into one bowl, and your dry ingredients into another. 

Mix the dry into the wet ingredients, before mixing in your bananas and chocolate chips. 

Bake @ 180°C for 20-25 mins.

Bran muffins 

  • 1 banana (mashed)
  • 1 apple (grated)
  • 1 ¼ cup nutty wheat
  • 1 cup bran
  • 1 tsp baking soda
  • Pinch of salt
  • ½ cup brown sugar
  • 1 egg
  • 1 cup milk
  • ½ cup vegetable oil
  • ½ tsp vanilla essence 

Measure out all your wet ingredients into one bowl, and your dry ingredients into another. 

Mix the dry into the wet ingredients, before mixing in your apples and bananas. 

Bake @ 180°C for 20-25 mins.
